Homemade Keto Ice Cream Recipe
Before you make this ice cream you’re going to need an electric ice cream maker. I always keep the bowl part in the freezer so it’s ready anytime I get a hankering to make ice cream.
Ingredients:

4 Tbsp Lakanto Powdered Monkfruit Sweetener
2 13.5 oz Cans Coconut Cream
1 Cup Unsweetened Almond Milk
2 Scoop Collagen – I get mine from Thrive Market Collagen but any good quality will do.
8oz Cream Cheese (softened)
1 Cup Strawberries (diced)
Directions:
Very important: Make sure the bowl part of your electric ice cream maker has been in the freezer for at least 24 hours. As I said earlier, that’s where I always keep it so it’s always ready.
Place the cans of coconut cream in the refrigerator so they are cold when you’re ready to use them.
Place the block of cream cheese on the counter for a few hours to soften.
Once you’ve done everything above, place all the ingredients except the diced strawberries in a large mixing bowl. Use an electric mixer until it’s blended well. You can also use a Vitamix or blender to do this.
After the ingredients are well-blended pour in the ice cream maker bowl (already inserted in the ice cream maker). Place the churner in, cover then turn it on.
Take a peek at it every so often to see consistency. Once you see ice cream forming, go ahead and add your strawberries just like in the video below.
